Ingredients

For Cheesecake Filler
  • 150 gmshazelnut chocolate paste
  • 150 gmscream cheese (cold)
  • 1/4th cup low-fat milk (chilled)
  • 1 lemon rind
  • 6 dates (seedless)
For Crumble
  • 75 gms oat biscuits (coarsely crushed)
  • 1 tbsp virgin coconut oil (melted)

Preparation

Step 1:
Mix the oat biscuits with the oil to get a bread crumb-like texture, and keep aside.
Step 2:
Take the milk, dates, lemon rind, and cream cheese in a blender to make the cheesecake.
Step 3:
Blend for about a minute, or till you get a smooth texture.
Step 4:
Add the Strawberry Cheesecake ice cream to the mixture, and blend again till smooth.
Step 5:
Use a spatula to break the ice cream lightly, to ensure even blending. Pour in a piping bag.
Step 6:
Leave the cheesecake mixture to thicken in the freezer for about 30 minutes.

To assemble take some of the biscuit crumble in a glass. Pipe in half of the cheesecake mixture and layer with sliced strawberries. Repeat with a layer of biscuit crumble and cheesecake filler.

Let it chill in the freezer for 1 hour or till it sets. Garnish with sliced strawberries, flowers (optional) and a dash of biscuit crumble. Serve chilled. Slurp away!
